White Ragu'

White ragu, a savory Italian sauce made without tomatoes, is a delicious and hearty variation of the classic meat-based ragu. Often referred to as "ragù bianco," this dish is crafted with a combination of tender meat and aromatic vegetables, to have a deeply flavorful sauce. Unlike the traditional red ragù, which relies on tomatoes for its color and tanginess, white ragu showcases the full depth of its ingredients, often with a mixture of pork, beef, or veal, complemented by herbs like rosemary, thyme, and bay leaves.

The beauty of white ragu lies in its simplicity and versatility—it pairs wonderfully with a variety of pastas, from pappardelle to tagliatelle, and can be served as a comforting main dish or as a filling for lasagna. Ingredients

  • ground beef

  • pork sausage

  • carrots

  • celery

  • onion

  • extra virgin olive oil

  • peas

  • aromatic herbs

  • white wine

  • vegetables broth

  • tagliatelle from scratch (find the recipe in "Pasta")



























Steps

  1. cut carrots celery and onion in little pieces and put them in a frying pan. Add extra virgin olive oil and cook very slowly for 15 minutes

  2. add the ground beef and the pork sausage

  3. spread on top white wine and add some vegetables broth and cook for 20 minutes

  4. meantime cook peas with onion and extra virgin olive oil, adding water

  5. add cooked peas and herbs in the ragu' and cook for another 10 minutes

  6. it is delicious with home made tagliatelle.
