Vegetable rolls

Vegetable rolls are a delicious and healthy dish made from a variety of fresh vegetables, easy to prepare and beautiful to serve. They can be served cold, cooked in the oven or lightly fried, depending on the style. These rolls are perfect as an appetizer, snack, or even a light meal.

The fillings can vary widely, but common vegetables used include Cheese and prosciutto

For added flavor, you might also include herbs.

Vegetable rolls are also very versatile, and can be customized to suit different dietary preferences, including vegan and gluten-free options.

Ingredients

  • zucchini

  • belly peppers

  • cherry tomatoes

  • mozzarella cheese

  • prosciutto

  • breadcrumbs

  • grated parmesan cheese

  • chopped parsley

  • basil

  • black pepper

  • salt

  • extra virgin olive oil


Steps

  1. clean and slice red peppers and place them in a baking pan, spreading on top extra virgin olive oil and salt. Fry at 380F for 30 minutes

  2. slice zucchini and roast in a frying pan

  3. prepare your rolls filling with mozzarella and prosciutto

  4. place the rolls in a baking pan, alternating red pepper roll and zucchini roll

  5. spread on top of them, a mixture of bread crumbs, salt, black pepper, grated parmesan cheese, chopped parsley and basil

  6. add on top the cherry tomatoes and finish with extra virgin olive oil

  7. bake at 380F for 30 minutes
