Buongiorno,
today I am going to prepare a revised version of the classic Saltimbocca alla Romana. I'll replace the beef with the Swordfish, using Pancetta or Bacon.
The final result is amazing and you can taste the product of the sea and the land one together in the same dish: the perfect combination of the ingredients.

Ingredients
Swordfish
Pancetta or Bacon
Sage leaves
Flour
White Wine
Extra Virgin Olive Oil
Black Pepper
Salt
Steps
On top of each Swordfish thin slice putt Bacon/Pancetta and the Sage leaves
Coat the Swordfish slices with the Flour
Place the fish in a frying pan with Extra Virgin Olive Oil and fry them for few minutes
Add white Wine and spread Salt and Black Pepper on top, continuing cooking for few more minutes
