Saltimbocca

Buongiorno,


today I am posting a Roman recipe, Saltimbocca.

It is a Veal Roll stuffed usually with Prosciutto.

Today I changed a little bit the original recipe and I prepared also a pepper and potatoes dressing.

At the end a delicious recipe!


Here are the ingredients and the steps. You can find the video recipe in my Instagram page (my profile - highlights) or in my YouTube channel.


Ingredients

  • Veal

  • Breadcrumbs

  • Black Pepper

  • Herbs

  • Grated Parmesan Cheese

  • Garlic

  • Salt

  • Extra Virgin Olive Oil

Dressing

  • Peppers

  • Potatoes

  • Basil

  • Extra Virgin Olive Oil

  • Salt

Steps

  • place in a frying pan the Garlic and Extra Virgin Olive Oil and fry until the Garlic becomes golden

  • in a bowl place the Bread Crumbs, the salt, the Black peppers, the Herbs, the Grated Parmesan Cheese and mix all together

  • add the Bread Crumbs mixture in the frying pan and fry for few minutes until the Bread Crumbs becomes golden

  • start spreading little pieces of Veal with Extra Virgin Olive Oil and stuff with the Bread Crumbs mixture

  • Close them like a roll and fixing with a toothpick

  • coat them with Bread Crumbs

  • spread on top Extra Virgin Olive Oil

  • cook in a frying pan for few minutes

Dressing

  • cook the Peppers in the oven for 40 minutes

  • when they cold down, peel them

  • boil the peeled Potatoes

  • place in a blender, the Peppers, the Potatoes, Salt, Basil and Extra Virgin Olive Oil and blend all together

  • place the dressing and add on top the Saltimbocca
