I have a funny story today.
The story of the Pesceuovo or Fishegg.
This recipe originated from the Sicilian east coast, where I was born and grew up.
The legend says that when the sicilian fishermen came back from fishing without any catch, they used to say to their wives: Stasera Pesceuovo! (this evening, Fish-egg ! Meaning: eggs as fish)!
I like it so much, it is like an omelette with the shape of fish.

Ingredients
Eggs
Parsley
Basil leaves
Grated Parmesan
Plain Bread crumbs
Garlic
Salt
Extra virgin Olive oil
For the filling
Ham and cheese
Steps
Place in a bowl eggs, parsley, basil, grated parmesan , breadcrumbs, garlic and salt and start mixing until you obtain a creamy mixture.
In a frying pan, place the extra virgin oil and when the oil is very hot, place the mixture, spreading it around all the pan.
Cook it very slowly, adding the ham and cheese . Fold it.
Put in a plate, slice and serve!
