Minestra Soup and Palline

Buongiorno,

 Minestra and palline is a delicious dish in Italian cuisine and one of my favorite comfort food during the winter.

Minestra is the Italian term for a hearty soup, often made with vegetables, pasta, or rice. It's a staple of Italian comfort food and can vary from region to region. The ingredients typically include seasonal vegetables like carrots, celery, onions, tomatoes, and potatoes, sometimes with pasta or rice added. It's often served as a starter or main course.

Palline refers to small, round-shaped items, typically used to describe little meatballs or dumplings. These can be made from various ingredients, like ground meat, bread crumbs, and herbs, and can be served in soups like minestra or in other dishes. For example, palline di carne are small meatballs often served in a broth or alongside pasta.

In some Italian recipes, you might find palline (small meatballs) added to minestra, creating a delicious, filling dish with the texture and flavor of both the broth and the little dumplings or meatballs.

Ingredients

  • carrots

  • celery

  • onion

  • extra virgin olive oil

  • ground beef

  • egg

  • bread

  • milk

  • white wine

  • grated parmesan cheese

  • chopped parsley

  • nutmeg

  • salt

  • pasta


Steps

  1. cut celery, carrot and onion in little pieces

  2. place them in a pan with extra virgin olive oil and cook for few minutes

  3. add water to cover them and start cooking

  4. meantime prepare you meatball (very very small) placing ground beef, bread mixed with milk and bread mixed with white wine, nutmeg, grated parmesan cheese, salt, egg, chopped parsley, in a bowl and mixing all together. Prepare very small meatballs

  5. add the meatballs in the pan when the water start boiling and cooking for 15 minutes

  6. add pasta in the pan and cook for 10 minutes

  7. serve the minestra spreading on top grated parmesan cheese.
