Buongiorno!
Let me say, Spaghetti is one of the most iconic figure that represents Italy, my country!
Now it is summer, we need fresh vegetables, fresh recipes. The best you can find in Italy is Spaghetti and Pomodoro (tomato).
And we add Basil as well...and ricotta cheese, so we have the colors of the Italian flag! (red, white and green!)
This is a gourmet version, easy to prepare in few steps but very fashion to show to your friends during a dinner.

Ingredients
Spaghetti
Fresh Tomatoes
Basil leaves
Grated Parmesan Cheese
Ricotta Cheese
Extra Virgin Olive Oil
Salt
Garlic
Steps
In a frying pan place Extra Virgin Olive Oil, Basil and Garlic and fry for few minutes. Remove the Basil and Garlic
Peel and chop the Tomatoes and add in the frying pan and start cooking for 15 minutes
Meantime cook Spaghetti in boiling and salted water
Prepare the Basil Sauce placing in a blender the Basil, grated Parmesan Cheese and Extra Virgin Olive Oil. Blend until it becomes creamy
In a bowl place the Ricotta Cheese and some water from Pasta and mix with a fork to obtain a cream
Place Spaghetti in the frying pan with the Tomatoes. Cook for 5 minutes adding grated Parmesan Cheese
In a plate place the Ricotta cream, add on top Spaghetti, add on top Tomatoes and at the end spread the Basil Sauce.
