Insalata Russa (Russian Salad)

Insalata russa, or "Russian salad," is a classic Italian dish that typically features a combination of boiled vegetables, such as potatoes, carrots, green beans and peas, mixed with mayonnaise. It is often served as a side dish or appetizer at various gatherings and celebrations. While it's most commonly associated with Italian cuisine, it is known and enjoyed in many countries, with slight variations in ingredients and preparation methods.

In Italy, insalata russa is traditionally made by boiling the vegetables until tender, dicing them into small pieces, and then mixing them with a creamy dressing, usually mayonnaise or sometimes a mixture of mayonnaise and sour cream. Some versions may also include ingredients like pickles, ham, or hard-boiled eggs. It’s a rich, hearty dish that brings a comforting blend of flavors and textures, perfect for both casual meals and festive occasions.

In my house we use to prepare it for New Year Eve celebration.

Ingredients

  • potatoes

  • carrots

  • peas

  • green beans

  • mayonnaise

  • tuna in canvas













Steps

  1. boil carrots, peas, green beans and potatoes

  2. cut all the vegetables in little pieces

  3. mash part of the potatoes

  4. place mayonnaise, mashed potatoes and tuna in a bowl and mix all together

  5. add the boiled vegetables and mix

  6. place the mixture in a tray and decorate as you prefer.
