today Focaccia, warm, delicious, soft Focaccia!
Focaccia arrives from Italy, probably from the ancient Rome.
It is similar to Pizza but there are some differences: Pizza has an Hydration around 50% - 60% and the Focaccia has a very high hydration, for example in my recipe the hydration is around 85% - 90%.
Pizza is with Sauce and Focaccia is white.
You can eat Focaccia as you prefer. I like with Prosciutto or Mortadella, or plain.

Ingredients
450 gr / 4 cups Flour
500 ml Water (400ml for the dough and 100ml to put on top)
20 gr / 2.5 tbsp Salt
10 gr / 1.5 tbsp Sugar
40 ml Extra Virgin Olive Oil (20ml for the dough and 20ml to put on top)
2 gr / 0.5 Tsp Yeast
Rosemary
Steps
in a bowl place the Flour, the Yeast and the Sugar
add the Water, the Extra Virgin Olive Oil and the Salt
leave the dough growing 2 hours
place the dough in a oiled baking pan
leave the dough growing for another 30 minutes
in a bowl mix the remaining Oil and Water and spread on top of the the Focaccia, adding Rosemary
bake it 375F for 25 minutes
