Today is vegetables' day! I am going to prepare a vegan recipe, easy, tasty and mainly healthy!
Aromatic and fragrant, simple and quick to prepare, Fennel retains all its flavor and crunchiness. Now you don't have any excuses when you come home late from work and have little time to cook; this light side dish is your dinner-saving solution, perfect to accompany both meat and fish.

Ingredients
Fennel
Black and Green Olives
Cherry Tomatoes
Pine nuts
Extra Virgin Olive Oil
Salt
Onion
Black Pepper
Steps
Place Evo and chopped Onion in a frying pan and cook for 2 minutes
Add Cherry Tomatoes and Salt, cooking for 5 minutes
Add sliced Fennel (very thin), Black and Green Olives, Salt and Black Pepper and cook for 10 minutes or so
Serve it with Pine nuts on top
