Buongiorno,
the Eggplant and Rice rolls are a tasty and very easy to prepare dish, that the whole family will enjoy. Simple sliced eggplant stuffed with rice, baked au gratin with tomato sauce and cheese. This recipe is versatile: you can serve as a main or a side dish. The eggplants are pre-cooked while the filling is made of risotto. Try this recipe, it is very simple but really tasty!

Ingredients
Eggplant
Rice
Ricotta Cheese
Basil
Mozzarella cheese
Parmesan Cheese
Tomato sauce
Extra Virgin Olive Oil
Salt
Steps
Slice the Eggplant and fry it in a frying pan with Evo
Place Ricotta Cheese, a pinch of Salt and Basil in a blender and blend them together
Cook the Rice in boiling and salted water
Place the cooked Rice, the Ricotta and Basil mixture, Mozzarella Cheese and grated Parmesan Cheese in a bowl and mix together
Stuff the sliced Eggplant with the Rice and roll them
Place Evo, Tomato sauce and the rolls in a baking pan
Cover the Rolls with extra Tomato sauce and grated Parmesan Cheese; spread on top Basil
Bake at 385F for 15 minutes
