🍋 So far so cook
I love tomatoes in every shape or way you can image.
Today I tried a new recipe very simple and summer!

Ingredients
cherry tomatoes
parsley
basil
mint
Garlic
panko bread crumbs plain
anchovies
extra virgin olive oil
salt
Steps
🍋 cut Cherry Tomatoes in the middle and place in a baking pan, face up, spreading Extra Virgin Olive Oil and salt on top
🍋 bake for 20 minutes in the oven 380F
🍋 in a bowl, mix the Herbs already washed and cut (parsley, basil, mint and garlic), with Extra Virgin Oil of Olives.
🍋 in a frying pan place Extra Virgin Olive Oil, 2 Anchovies cut in little pieces and start cooking slowly for few seconds.
🍋 add the Panko Bread Crumbs and continue to cook mixing until it becomes gold.
🍋 when the Cherry Tomatoes are baked, place them in a bowl and mix with the Herbs mixture and the Panko Bread Crumbs mixture.
You can use it as appetizer or as site with fish, and also on top of bruschetta!
